Are you a soup lover?

It's not winter yet but that doesn't stop me from having a delicious soup. This is an easy recipe, it's filling, and delicious. This soup is not just for vegans. Everyone can enjoy.
Ingredients:
Blender
2 to 2 1/2 cups broccoli
1 med white potato (cubed)
1 tbsp Vegetable oil
3 tbsp garlic (I prefer minced garlic in the jar)
1 (32oz) vegetable stock (I used unsalted)
4-5 tbsp nutritional yeast
black pepper (your liking)
1 tsp oregano
pinch sea salt
sour cream (I used Kite Hill--vegan alternative)
Instructions:
Heat olive oil in a non-stick deep large pan.
When oil is hot, add garlic and cook about 5 mins.
Add cubed potato and continue cooking for about 7 minutes over medium to high heat. Potatoes will start to brown a little and that's okay.
Add 1/2 vegetable stock and continue to cook (boil) for about 7 more minutes.
Add broccoli and the remaining vegetable stock. Cook for 10 minutes. I didn't let the broccoli get too soft.
Blender Time: I used the Vitamix Blender.
Pour soup (including the liquid) to a blender along with nutritional yeast and oregano.
Blend until perfectly smooth!Â
Taste to make sure it's seasoned to your liking.
Pour into a bowl
Top with fried tofu (additional protein) (optional)
Top with sour cream (optional)
Enjoy!

The soup was flavorful and filling. I wish I could have eaten a bigger bowl.

Of course, topping toff with a glass of wine.
