Broccoli Soup

Are you a soup lover?

It's not winter yet but that doesn't stop me from having a delicious soup. This is an easy recipe, it's filling, and delicious. This soup is not just for vegans. Everyone can enjoy.



  1. Heat olive oil in a non-stick deep large pan.

  2. When oil is hot, add garlic and cook about 5 mins.

  3. Add cubed potato and continue cooking for about 7 minutes over medium to high heat. Potatoes will start to brown a little and that's okay.

  4. Add 1/2 vegetable stock and continue to cook (boil) for about 7 more minutes.

  5. Add broccoli and the remaining vegetable stock. Cook for 10 minutes. I didn't let the broccoli get too soft.

  6. Blender Time: I used the Vitamix Blender.

  7. Pour soup (including the liquid) to a blender along with nutritional yeast and oregano.

  8. Blend until perfectly smooth! 

  9. Taste to make sure it's seasoned to your liking.

  10. Pour into a bowl

  11. Top with fried tofu (additional protein) (optional)

  12. Top with sour cream (optional)

  13. Enjoy!

The soup was flavorful and filling. I wish I could have eaten a bigger bowl.

Of course, topping toff with a glass of wine.
