Easy Macaroni

What is your comfort food?

Macaroni is a favorite of mine. I wouldn't say this is a macron and cheese dish but it does include cheese.


This recipe is simple and any protein of your choice can be added. I added tofu and Virgil and Jewel added Italian sausage. They didn't even complain about the vegan cheese.


Ingredients

  • 3 cans Rotel

  • 2 cans Fire Roasted Diced tomatoes (I used garlic flavor)

  • 1 package Vegan cheese (any cheese of your choice)

  • 1 pkg macaroni

Instructions:

  • Boil Macaroni according to package and place in a greased casserole dish. I sprayed my dish with Pam cooking spray.

  • Add tomatoes with macaroni and mix well.

  • Add entire package of cheese on top.

  • Bake 350 degrees for 30 to 35 minutes or until brown.

  • I didn't cover with foil

  • Let cool

  • Enjoy


The mood craved for some comfort food and luckily I already had all the ingredients. No shopping needed to put this together. If you have spaghetti sauce, you could use it instead. It would be just as delicious.


If you're searching quick, easy and simply, this would be a great meal prep dish. You can basically add whatever you like. Next time, I will add my go to broccoli or spinach.
